What actually holds the opening up
A steel beam does not simply sit in the wall. It bears on padstones — dense blocks that spread the load into the masonry below — and those bearings are sized by the engineer for the load and the wall.
Most failures we are called to are bearing failures, not beam failures: the steel was fine, what it was sitting on was not.
Older houses round here
Solid-wall Victorian and Edwardian property was built with far more internal walls than people want now. That is why wall removal is one of the most common jobs we take on, and why the ground conditions and the wall construction have to be checked rather than assumed.
Looking after your structural work
Expect fine cracking along the new plaster line as the house settles into the change. That is normal and gets filled at decoration. Anything wider than a hairline, or that keeps opening, is worth a look.

For anything load-bearing, yes, and building control will want the calculations. We arrange it as part of the job rather than leaving you to find one.
Usually, from the direction of the joists, what sits above it and where it is in the plan. Where it is not obvious we open up a small section rather than guess.
The work itself is often a few days. The lead time is usually the engineer's calculations and getting the steel cut, which is why we start that early.
